DATES, WALNUTS AND SPICES STUFFED MIDDLE EASTERN COOKIES.
Ingredients:
- 500 g Semolina
- 150 g melted butter
- 1.5 cup oil
- Mix together and leave overnight.
The next day, add:
- 1.5 cup flour
- 0.5 cup milk powder
- 1 cup powdered sugar
- 1 TBS ground nutmeg or pumpkin spice
- 0.5 teaspoon baking powder
Mix it well, then add:
- 1 teaspoon vanilla extract
- 2 TBS Rosewater
- 1 teaspoon dry yeast mixed with 0.25 cup of lukewarm water and 1 teaspoon of sugar.
- Knead everything together and let it rest for an hour.
- Meanwhile, you can do the date filing,
- Mix together in a mixer:
- 500 g dates, fennel, anise, walnuts, 2 TBS oil and Rosewater.
- Make a ping pong ball from the fee dough, flatten it and fill it with a stuffing smaller ball.
- Bake for about 15 to 20 minutes until it becomes golden at 350F/180C
