Coconut Covered Cookies

Coconut-covered cookies make the perfect sweet treat when you want something light. Dipped in simple syrup and covered with unsweetened coconut flakes, Coconut lovers will love these easy and delicious cookies, which are full of coconut flavor.

Ingredients:

For the dough:

  • 4 cups of flour

  • 10 grams of baking powder

  • ¼ cup sugar

  • 200 g of soft butter

  • 1 egg L

  • 1/2 teaspoon vanilla extract

  • 1/3 cup of oil

  • 1/2 cup of water/milk

For the simple syrup:

  • 2 cups of water

  • 1 cup of sugar

  • Juice of half a lemon

  • Unsweetened coconut.

  • Let’s start by making the syrup since it is recommended to dip the cookies in the cooled syrup:

  • Cook the syrup ingredients for about 20 minutes.

Instructions:

  • 1. Mix all the dry dough ingredients in a bowl.

  • 2. Add the wet dough ingredients.

  • 3. Knead well until a uniform dough is obtained.

  • 4. Form thin fingers from the dough and place on a baking sheet lined with baking paper.

  • 5. Put in a preheated oven at 170° / 330 Fahrenheit and bake for about 20 minutes until golden.

  • First, dip the cookies in the syrup and then in the coconut.

  • After the cookies have cooled completely – keep them in a jar.
