Palmier Cookies

Look at this golden, sugary caramel crusty pastry

Palmier cookies are easy to make with only three simple ingredients.

A Palmier ( French —’ palm tree’) is also called a pig ear, elephant ear, or butterfly cookie. No matter what you call them, they’re super easy and yummy, and I could quickly eat the whole batch myself.

Ingredients:

  • Frozen puff pastry
  • 200 gr Sugar
  • 1 tsp cinnamon
  • Optional: crushed walnuts.

Instructions:

  • 1.  If your puff has been frozen, place it in the refrigerator to thaw overnight, and preheat your oven to 400F/200°C.
  • 2. Mix sugar and cinnamon.
  • 3. Sprinkle them on your work surface generously the sugar mixture.
  • 4. Place the puff pastry on top.
  • 5. Sprinkle more sugar on top.
  • 6. Roll the dough until it becomes thin to ensure the sugar sticks to the dough.
  • 7.  Fold the dough’s left and right sides inward to meet in the middle, like a closed book.
  • 9. Sprinkle with more sugar with each folding to ensure it is covered with sugar.
  • 10. Transfer the log to a baking sheet. Cover with plastic wrap and chill for 30 minutes to give the dough time to firm up.
  • 11. Cut the log into cookies that are approximately 1cm wide.
  • 12. Coat each slice with the remaining sugar mixture and place on the prepared baking sheets.
  • 13. Bake for 10 minutes with a baking sheet until golden brown.
  • Let the palmiers cool for a few minutes on the baking sheet, then transfer to a cooling rack to cool completely.
