Ingredients:
- 200 grams of butter
- 70 grams of powdered sugar
- 1 egg
- 1 teaspoon vanilla extract
- 35 grams (3 tablespoons) cornflour
- 350 gr (2.5 cups) flour
- ⅛ teaspoon of salt
Stuffing – whatever you like:
- Nutella mixed with some almond flour
- Ground poppy seeds cooked with butter, milk, lemon zest and date spread
- Dates, cinnamon and crushed nuts.
- To close the cookie, use 1 egg white.
Instructions:
- Heat the oven to 170 degrees on turbo mode.
- Prepare the filling you like in advance.
- Mix in a mixer (short pulses) flour, cornflour, salt, powdered sugar and butter.
- Add an egg and mix; crumbs are formed.
- If the dough is tough, you can add a spoonful of milk, mix lightly, and combine it into a dough.
- Keep wrapped in the refrigerator for about 20 minutes.
- Divide the dough into 3 and roll it out to a thickness of about 3 mm into circles with a cutter.
- Fill each circle with your stuffing.
- Although a delicate layer of egg white is around and close,
- Bake for about 20 minutes or until the cookies are nicely golden.
- Cool completely on the baking sheet.
