Oh my goodness, the Lotus – cookie butter flavour mixed with – coffee ice cream cake takes it to a new level!
It’s seriously out of this world, no kidding!
Ingredients:
- 10-15 crushed Lotus cookies
- 40 gr melted butter
- 475 ml cream
- Pinch of salt
- 1\2 tsp of Vanilla paste
- 1\2 can of condensed milk
- 1 tbsp of coffee powder
- 1.5 tbsp of your favourite alcohol ( I used Fireball – a cinnamon whisky )
- For garnish – Biscoff cookie butter
Instructions:
- Place the Lotus cookies in a food processor and chop them to coarse crumbs.
- Combine the crumbs and melted butter in a bowl.
- Press the crust into your springform cake pan using a glass. Set it aside.
- Place cold heavy cream, condensed milk, salt, and vanilla in your mixer bowl and beat quickly.
- Whip for a few minutes.
- Transfer the mixture to an ice cream machine and add the alcohol.
- After 10 minutes, take half of it, place it on your cookie layer and put it in your prizer.
- Add coffee to the remaining mixture and mix for another 5 minutes until it combines.
- Place it on top of your delicious vanilla layer!
- Freeze for 3-4 hours.
- Heat the cookie butter in the microwave for 15-20 seconds until a bit liquid.
- Once the ice cream is ready, pour your heated cookie butter.
