Coconut lovers, this is the recipe for you

How can anyone not love coconut? Even if you’re not a fan, give it a second chance with a quick, delicious, and fun recipe you can make with children. 

I used silicone moulds for the recipe, but if you don’t have any, you can create a ball with your hands. It might be sticky and messy, but you’ll have a homemade bounty bar. The best part is that you can control the amount of sugar and adjust it to your liking.

Ingredients:

250 cups unsweetened ground coconut

  • 3/4 cup of coconut cream
  • 45 grams of butter at room temperature
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 tablespoon of glucose (glues the mixture – optional)
  • 100 grams of dark chocolate
  • 1 tablespoon of oil

Instructions:

  • Put all the ingredients of the mixture in a bowl
  • Fill a silicone mould.
  • Transfer to freezing for about an hour and a half.
  • Melt the chocolate and oil in the microwave in pulses of 30 seconds, stirring after each time.
  • Remove the frozen coconut from the silicone mould and rinse well.
  • Put approximately half a tablespoon of chocolate into each silicone mould and add the coconut.
  • Push lightly to ensure that the rest of the chocolate comes out from all directions and that we get a thin and uniform coating.
  • Put it in the fridge for about 15 minutes.

*For those without patience for shapes, prepare the coconut mixture in a square mould, cool it, and cut it into pieces of the desired size; dip each piece in chocolate or pour all the melted chocolate over.
