Ingredients:
- 600 g of flour (preferably gluten-rich bread flour)
- 7 g dry yeast
- 450 ml lukewarm water
- 1 teaspoon of sugar
- 1 teaspoon of baking soda
- 1 teaspoon of salt
- 2 tablespoons of oil

Instructions:
- Heat the oven to 250 degrees Celsius / 480 degrees Fahrenheit.
- Sift the flour to make sure there are no lumps.
- Add yeast and mix.
- Dissolve the sugar, soda, and salt in water and add them to the flour.
- Put the batter for 8 minutes at medium speed.
- While kneading, add oil.
- The dough should be a little sticky if you add a little water while kneading.
- Let rise for an hour in a bowl covered with plastic wrap.
- Grease your hands and divide into about 15 balls (or more, depending on the desired size).
- Leave covered for about 15 minutes.
- Lightly roll each circle to a thickness of about 1 cm.
- Place lightly floured baking paper on a tray and put pita bread on it.
- Cover with a towel and wait for about 15 minutes.
- Bake in a preheated oven for 3 minutes on each side or until the pita is golden.
- Repeat the operation with the rest of the pitas.
- It is crucial to ensure that the oven is hot before the pitas are baked; otherwise, a pocket will not form.
- When the pitas come out of the oven, put them in a towel or a tied bag to keep them flexible.
- The pitas are tastiest on the day of preparation.
