Plum Crumble Pie

Sweet, juicy plums topped with a buttery, crisp crumble make this the ultimate dessert!

Ingredients:

Pie Filling:

  • 15-20 plums
  • 2/3 cup sugar
  • 1/4 tsp sea salt
  • 1/4 tsp cinnamon
  • 2 tbsp cornstarch
  • 1/4 tsp pure vanilla extract

Crumble Topping:

  • 1 cup oats
  • 1/2 cup flour
  • 1/4 cup almond flour
  • 3/4 cup light brown sugar
  • 3/4 tsp salt
  • 1/2 tsp cinnamon
  • 6 tbsp unsalted butter

Instructions:

  1. Cut plums into quarters
  2. Mix plums, sugar, salt, and cornstarch
  3. Prepare the topping – stir together oats, flours brown sugar, salt, and cinnamon with softened butter
  4. Stir until the dry bits are saturated and begin to clump together

Assembly:

  1. Pour the plum mixture into the crust
  2. Top with crumble topping
  3.  Bake for 30-35 minutes, until the topping is golden brown and the filling is bubbling
  4. Let cool before serving
