Ingredients:
Pie Filling:
- 15-20 plums
- 2/3 cup sugar
- 1/4 tsp sea salt
- 1/4 tsp cinnamon
- 2 tbsp cornstarch
- 1/4 tsp pure vanilla extract
Crumble Topping:
- 1 cup oats
- 1/2 cup flour
- 1/4 cup almond flour
- 3/4 cup light brown sugar
- 3/4 tsp salt
- 1/2 tsp cinnamon
- 6 tbsp unsalted butter

Instructions:
- Cut plums into quarters
- Mix plums, sugar, salt, and cornstarch
- Prepare the topping – stir together oats, flours brown sugar, salt, and cinnamon with softened butter
- Stir until the dry bits are saturated and begin to clump together
Assembly:
- Pour the plum mixture into the crust
- Top with crumble topping
- Bake for 30-35 minutes, until the topping is golden brown and the filling is bubbling
