One of my favorite bakes, delicious bread sticks to snack on at any time!
Ingredients:
- 450g flour
- 50g whole wheat flour
- 375ml water
- 4g dry yeast
- 10g salt
- 1 tbsp chopped herbs: rosemary, oregano, basil
- 250g chopped olives and sun-dried tomatoes
- You can also add cheese crumbs if you like

Instructions:
- Mix all ingredients for the dough until well combined
- Cover and let it rest at room temperature for 15 minutes
- Do one set of folds and let it rest for another 15 minutes
- Add the olives, sundried tomatoes, and herbs to the mixture, then refrigerate it to ferment overnight
- Divide the dough into six equally sized pieces, then pull and twist each piece – let them rest for 15 minutes
- I recommend using a bench scraper for this
- Preheat a baking tray to 250°C and bake for 15-20 minutes
Tip: Transform your cooking experience by simply placing 3-4 ice cubes at the bottom of your stove. You will create a moist cooking environment to make your pastry crispier and shinier.
