Strawberry Meringue Ice Cream Cake

Strawberry Meringue Ice Cream Cake

An orange-zested base with a delicious ice cream strawberry cake mix together to make a delicious treat!

Ingredients:

Base:

  • 2 eggs
  • 120g sugar
  • Pinch of salt
  • 100ml oil
  • 140g flour
  • 5g baking powder
  • Orange zest
  • 5g soda powder
  • 1/2 cup orange juice or milk

Ice Cream:

  • 475ml sweet cream
  • 200g condensed milk
  • 250g ground & filtered strawberries
  • 1 tbsp alcohol
  • 2 drop of red food colouring (if necessary)
  • 1/2 tsp high-quality vanilla paste/extract
  • Broken meringue
  • 100g melted white chocolate

Instructions:

  1. Preheat the oven to 180C. Grease a mold

Preparing the base:

  1. Beat eggs with a pinch of salt and gradually add sugar until a stable foam is obtained
  2. Add oil in a slow stream while whisking
  3. Add flour and baking powder to the mixture, alternately with the orange juice
  4. Pour into a pan and bake until a toothpick inserted into the cake comes out dry with moist crumbs. Cool well.

Making the ice cream:

  1. Grind the strawberries in a food processer and filter well to avoid seeds
  2. Place cold heavy cream, condensed milk, salt, alcohol and vanilla in your mixer bowl and beat quickly
  3. Lightly mix the strawberries in the whipped cream
  4. Transfer everything to an ice cream machine for 10 minutes
  5. While the ice cream is still soft, add chopped strawberries, meringue, and a gentle stream of around 50 grams of melted white chocolate

Final Assembly:

  1. With a cake cutter, cut the base into the desired shape (circles or squares)
  2. Fill with ice cream
  3. Sprinkle melted white chocolate over the cake and strawberry

Store in the fridge, and enjoy the cake!
