Masala Chai Cinnamon Cake

You have to try this one – it’s full of spices and has an amazing aroma…

Ingredients:

  • 1 1/4 cups (250g) white sugar
  • 4 large eggs
  • 1 1/3 cups (300g) canola oil
  • 2 masala chai teabags
  • 1 tsp vanilla extract
  • 3 cups (420g) white flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 200g sour cream

Cinnamon Mixture:

  • 3/4 cup (150g) light brown sugar
  • 150g butter
  • 2 tbsp cinnamon powder

Glaze:

  • 150g powdered sugar
  • 2 tbsp milk

Instructions:

  1. Preheat the oven to 180°C (350°F) and grease a baking pan
  2. Steep two teabags in a cup of boiling water
  3. Melt butter in the microwave. Mix with brown sugar and cinnamon until smooth; set aside
  4. In a bowl, beat eggs and sugar for 2-3 minutes until fluffy. Gradually add oil, then vanilla, and the brewed tea
  5. In another bowl, mix flour, baking powder, baking soda, and salt. Combine with the wet mixture and add sour cream until smooth
  6. Pour the batter into the greased pan and drizzle the cinnamon mixture on top. Swirl with a knife to create a marble effect
  7. Bake for about 40 minutes or until a toothpick comes out with moist crumbs
  8.  Let the cake cool slightly. For the frosting, mix powdered sugar and milk until smooth. Frost the cake and serve. Enjoy!
