A simple snack perfect to share during Valentines day!
Ingredients:
For the cookies:
- 170g unsalted softened butter
- 150g granulated sugar
- 1 large egg at room temperature
- 2 tsp vanilla extract
- 280g flour
- 1/4 tsp salt
For decorations:
- 150g chocolate of choice melted
- 2 tbsp sprinkles
- Powdered sugar

Instructions:
- In a large bowl, cream together softened butter and sugar, then add an egg and vanilla
- Sift in flour and salt, and stir to combine
- Divide the dough in half
- Roll out one half between sheets of baking paper to 5mm thickness and chill in the fridge
- Preheat the oven to 160C fan and line the baking trays
- Cut shapes from the chilled dough and place them on the trays, spacing them 2cm apart
- Bake for 8-10 minutes until slightly browned on the edges, then cool on a rack
- Dip half of each cookie in the melted chocolate of choice and transfer into the baking tray baking paper
- Another option is to dust with powdered sugar
- Sprinkle and decorate as you like and enjoy!
If you can’t eat them all in one sitting, store them in a cool container like a cookie jar!
