Russian/Ukrainian filled nut cookies; make cookies, not war.
Ingredients:
Dough:
- 250g soft butter
- 100g powdered sugar
- Pinch of salt
- 1/2 tsp vanilla extract
- 2 eggs
- 1/2 tsp baking powder
- 350g flour
- 50g cornstarch
Filling:
- 2 options:
- 500g dulce de leche + ground walnuts
- 500g pistachio spread + ground pistachios

Instructions:
- In a mixer with a flat beater, start mixing butter, powdered sugar, salt, and vanilla until combined
- Add one egg at a time until combined
- Add the flour and baking powder
- Wrap the dough in cling film and refrigerate for about an hour
- Divide the dough into balls (about 4 grams per ball, depending on the pan)
- Heat the pan, and place a dough ball in each hole – close, and fry on both sides
- Transfer cookie halves into a cooling rack
- Fill the halves with your filling of choice, and close together
