Oreshki – Walnut Shaped Cookies

Russian/Ukrainian filled nut cookies; make cookies, not war.

Ingredients:

Dough:

  • 250g soft butter
  • 100g powdered sugar
  • Pinch of salt
  • 1/2 tsp vanilla extract
  • 2 eggs
  • 1/2 tsp baking powder
  • 350g flour
  • 50g cornstarch

Filling:

  • 2 options:
    • 500g dulce de leche + ground walnuts
    • 500g pistachio spread + ground pistachios

Instructions:

  1. In a mixer with a flat beater, start mixing butter, powdered sugar, salt, and vanilla until combined
  2. Add one egg at a time until combined
  3. Add the flour and baking powder
  4. Wrap the dough in cling film and refrigerate for about an hour
  5. Divide the dough into balls (about 4 grams per ball, depending on the pan)
  6. Heat the pan, and place a dough ball in each hole – close, and fry on both sides
  7. Transfer cookie halves into a cooling rack
  8. Fill the halves with your filling of choice, and close together
