Italian Almond Cookies

Italian Almond Cookies

Made with almond flour and a hint of lemon, these Sicilian sweets are super easy to make, and the results is so tasty!

Ingredients:

Lemon Almond Cookies:

  • 375g almond flour
  • 170g powdered sugar
  • 1 egg
  • 1/4 tsp baking powder
  • 30g lemon juice
  • Zest of 1 lemon
  • Icing sugar for decoration

Cocoa Almond Cookies:

  • 350g almond flour
  • 25g cocoa powder
  • 175g powdered sugar
  • 1/4 tsp baking powder
  • 2 eggs
  • Icing sugar for decoration

Instructions:

  1. For each type of cookie, mix all ingredients in a bowl
  2. Refrigerate, then weight out 25g balls and roll
    • You can also mix both mixtures together into one ball for a combined taste
  3. Coat each ball with powdered sugar
  4. Pinch lightly, then place on baking tray
  5. Bake for 8 minutes at 175C or 12 minutes if you prefer a crispier cookie

You can store your cookies in a glass jar like I’ve done for easy access for snacking!
