Spanakopita – Spinach and Feta Phyllo Pastry

If you haven’t tried the Greek savory pie spanakopita yet, you’re in for a treat! Crispy, creamy, golden and delicious – lets dive in and layer those delightful flavours!

Ingredients:

  • 1 tbsp + 1/2 cup olive oil, divided
  • 1 finely chopped large onion
  • 3 minced garlic cloves
  • 1 package frozen chopped spinach
  • 1 package frozen phyllo dough thawed
  • 2 large eggs, lightly beated
  • 2 cups crumbled feta
  • 1/2 cup cheddar cheese
  • 1/2 cup Greek yoghurt
  • 2 tsp chopped fresh mint
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions:

  1. Preheat the oven to 350F
  2. Heat 1 tbsp of oil over medium heat in a large skillet. Sauté the onion for 3-5 minutes, then add garlic and spinach. Remove from the heat and let cool for 5 minutes
  3. In a bowl, mix eggs, cheese, salt, and pepper. Stir in the spinach and mint
  4. Brush a 13×9 baking dish with oil. Layer 3-4 sheets of phyllo dough in the dish, brushing each with oil.
  5. Set aside 3-4 sheets of dough for later. Crumple the remaining sheets and spread them over the pan
  6. Spread the spinach mixture over the phyllo evenly
  7. Put the remaining phyllo sheets on top, brushing with oil. Cut the top layer carefully into squares
  8. Bake for 45-50 mins until golden brown. Let stand for 5 minutes before cutting.
