Tomato Spaghetti Sauce

Tomato, black olive, garlic… there’s something so comforting about eating spaghetti with this rich tomato sauce!

Ingredients:

  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 1 medium zucchini, diced
  • 1 large carrot, grated or finely diced
  • 200g chopped tomatoes (canned or fresh)
  • 2 tbsp tomato paste
  • 1-2 tbsp chili flakes (adjust to taste)
  • 4 garlic cloves, minced
  • 1 tsp salt (or to taste)
  • Freshly ground black pepper
  • Black olives
  • Fresh basil

Instructions:

  1. Heat the olive oil in a large pan over medium heat. Add the chopped onion and saute until golden and fragrant (about 5 minutes). Then add the zucchini and carrots
  2. Add the chopped tomatoes, tomato paste, chili flakes, salt, pepper, and oregano. Stir well and simmer on low heat until the sauce thickens (10-15 minutes)
  3. Stir in the minced garlic and cook for 1 more minute (toasting the garlic slightly enhances the flavour). Taste and adjust seasoning – add more salt, chili, or a pinch of sugar if needed
  4. Toss the sauce with freshly cooked spaghetti. Top with black olives and fresh basil leaves.
