Tomato, black olive, garlic… there’s something so comforting about eating spaghetti with this rich tomato sauce!
Ingredients:
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 1 medium zucchini, diced
- 1 large carrot, grated or finely diced
- 200g chopped tomatoes (canned or fresh)
- 2 tbsp tomato paste
- 1-2 tbsp chili flakes (adjust to taste)
- 4 garlic cloves, minced
- 1 tsp salt (or to taste)
- Freshly ground black pepper
- Black olives
- Fresh basil

Instructions:
- Heat the olive oil in a large pan over medium heat. Add the chopped onion and saute until golden and fragrant (about 5 minutes). Then add the zucchini and carrots
- Add the chopped tomatoes, tomato paste, chili flakes, salt, pepper, and oregano. Stir well and simmer on low heat until the sauce thickens (10-15 minutes)
- Stir in the minced garlic and cook for 1 more minute (toasting the garlic slightly enhances the flavour). Taste and adjust seasoning – add more salt, chili, or a pinch of sugar if needed
- Toss the sauce with freshly cooked spaghetti. Top with black olives and fresh basil leaves.
