Pistachio & Puffed Rice Snack Bar

A no-bake treat with crunchy puffed rice, pistachio spread, and smooth chocolate coating will satisfy your next craving!

Ingredients:

Rice Bar:

  • 1.5 – 2 cups puffed rice
  • 50g butter
  • 2-3 tbsp pistachio spread
  • Handful of marshmallows

Coating:

  • 200g chocolate (melted with 1 tbsp oil)
  • Garnish:

Instructions:

  1. Melt butter and marshmallows in the microwave and mix with the pistachio spread
  2. Gently fold in puffed rice, then press into a lined tray
  3. Freeze for 1.5-2 hours until firm
  4. Melt the chocolate and oil in 30-second pulses in the microwave and stir well
  5. Cut base into bite-sized squares
  6. Dip each into melted chocolate
  7. Sprinkle with crushed pistachios, strawberries, and dried rose leaves
  8. Keep frozen between batches for clean cuts.
