Simple bagels that make a perfect side to any meal, or can be eaten on their own!
Ingredients:
- 600g bread flour (high-gluten preferred)
- 400g whole-wheat flour
- 625ml room temperature water
- 225g active sourdough starter
- 22g salt
- 1 1/2 cups sesame seeds
- 1 tbsp coarse salt

Instructions:
- In a large bowl, combine water sourdough, and add all flours and mix into a sticky dough. Cover and let rest for 30 minutes
- Add salt then fold, then set aside to rest another 30 minutes
- Perform 4 sets of stretch-and-folds every 30 minutes
- Divide the dough into 8-10 pieces, roll each into a pretzel shape
- Tip: If the dough resists, let it rest 5 minutes before rolling
- Spread the sesame seeds and coarse salt on a tray
- Lightly wet each pretzel with room temperature water and cover with seed and salt mixture, coating all sides
- Preheat oven or pizza oven to 450F
- Bake for about 10 minutes until deep golden brown
