Sourdough Sesame Bagels

Sourdough Sesame Bagels

Simple bagels that make a perfect side to any meal, or can be eaten on their own!

Ingredients:

  • 600g bread flour (high-gluten preferred)
  • 400g whole-wheat flour
  • 625ml room temperature water
  • 225g active sourdough starter
  • 22g salt
  • 1 1/2 cups sesame seeds
  • 1 tbsp coarse salt

Instructions:

  1. In a large bowl, combine water sourdough, and add all flours and mix into a sticky dough. Cover and let rest for 30 minutes
  2. Add salt then fold, then set aside to rest another 30 minutes
  3. Perform 4 sets of stretch-and-folds every 30 minutes
  4. Divide the dough into 8-10 pieces, roll each into a pretzel shape
    • Tip: If the dough resists, let it rest 5 minutes before rolling
  5. Spread the sesame seeds and coarse salt on a tray
  6. Lightly wet each pretzel with room temperature water and cover with seed and salt mixture, coating all sides
  7. Preheat oven or pizza oven to 450F
  8. Bake for about 10 minutes until deep golden brown
