No baking, no fuss – just a creamy raspberry filling, a coconut crust, and a rich chocolate shell make this a treat everyone is obsessed with!
Ingredients:
- Raspberries
- Shredded coconut
- Maple syrup
- 1 tbsp powdered sugar
- Vanilla
- Heavy cream
- Meringue crumbs (on the bottom)
- White chocolate
- 1 tsp coconut oil
- 1 tbsp pistachio spread

Instructions:
- Mix the raspberries, shredded coconut, maple syrup, powdered sugar, vanilla, and heavy cream in a blender.
- Break the meringue into small pieces, and put a few pieces on the bottom of a mold
- Pour your blended mixture into the mold, then chill until it sets
- Melt white chocolate and coconut oil in a microwave with 30-second pulses, after which you combine with the pistachio spread
- Remove bars from mold, dip the tops into the chocolate-pistachio mixture, then place on a pan and chill again to set
- Enjoy!
