Chocolate Covered & Pistachio Stuffed Raspberries

A simple bite sized treat that will take you no time or effort at all

Ingredients:

  • Raspberries
  • Pistachios (no shell)
  • 200g white chocolate
  • 10g coconut oil
  • 50g pistachio spread

Instructions:

  1. Gently press one pistachio into the center of each raspberry
  2. In a microwave-safe bowl, melt the chocolate + coconut oil in 30-second pulses, stirring until smooth
  3. Dip each raspberry into the melted chocolate, letting excess drip off, and freeze for 10 minutes
  4. Warm the pistachio spread slightly (10 seconds in the microwave) and drizzle over the raspberries for extra flair
  5. Chill in the fridge for 5 minutes to harden
