A dark chocolate-popsicle version of the viral Raspberry Bars, the creamy raspberry filling and coconut crust dipped in dark chocolate is a delicious snack!
Ingredients:
- 1.5 cups raspberries (fresh or frozen)
- 1 cup shredded coconut (toasted for extra crunch)
- 3 tbsp maple syrup (or honey)
- 1 tbsp powdered sugar
- 1 tsp vanilla extract
- 1/4 cup heavy cream (coconut cream for a vegan option)
- 1 cup dark chocolate chips (70% or higher)
- 1 tsp coconut oil
- Sprinkles
- Optional:
- Crushed pistachios
- Extra shredded toasted coconut

Instructions:
- Pulse coconut, maple syrup, raspberries, vanilla, and cream until sticky
- Press mixture into popsicle molds (or lined loaf pan for bars). Freeze for 1 hour
- Melt dark chocolate and coconut oil together, and if you choose to mix in crushed pistachios or shredded toasted coconut. Coat each popsicle in the mixture.
- Sprinkle toppings, then freeze for 10 minutes to harden
