Dark Chocolate Covered Raspberry Popsicles

A dark chocolate-popsicle version of the viral Raspberry Bars, the creamy raspberry filling and coconut crust dipped in dark chocolate is a delicious snack!

Ingredients:

  • 1.5 cups raspberries (fresh or frozen)
  • 1 cup shredded coconut (toasted for extra crunch)
  • 3 tbsp maple syrup (or honey)
  • 1 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream (coconut cream for a vegan option)
  • 1 cup dark chocolate chips (70% or higher)
  • 1 tsp coconut oil
  • Sprinkles
  • Optional:
    • Crushed pistachios
    • Extra shredded toasted coconut

Instructions:

  1. Pulse coconut, maple syrup, raspberries, vanilla, and cream until sticky
  2. Press mixture into popsicle molds (or lined loaf pan for bars). Freeze for 1 hour
  3. Melt dark chocolate and coconut oil together, and if you choose to mix in crushed pistachios or shredded toasted coconut. Coat each popsicle in the mixture.
  4. Sprinkle toppings, then freeze for 10 minutes to harden
