Dough:
- 500g flour
- 1 tbsp dry yeast
- 3 tbsp sugar
- 1 tsp salt

- Handful of chopped herbs
Topping:
- 100g shredded mozzarella

Instructions:

- Transfer to a lightly oiled bowl, cover, and let rise at room temperature for 1.5 hours (or overnight in the fridge)
- Preheat oven to 375F
- Place the dough on a parchment-lined tray and score crosswise lines
- Mix garlic butter and herbs, spread over dough, then press shredded mozzarella into the cuts
- Bake for 25-30 minutes until golden
Serve warm, and consider storing in a bread box for next time!
