This nutrient-packed salad is perfect for a light lunch, a refreshing side dish, or can be combined with some chicken for a protein focused healthy dish!
Ingredients:
Quinoa:
- 1 cup white quinoa
- Canola oil
- 2 cups water
- 1/2 tsp salt
Dressing:
- 2 tbsp olive oil
- 1 tsp sesame oil
- 1 1/2 tsp reduced balsamic vinegar
- Salt
- Black pepper
Salad Ingredients:
- Generously chopped green onion
- Chopped celery
- Chopped snow peas
- 1 small onion cubed
- Handful of chopped cilantro
- Spring of chopped basil
- 5-10 chopped mint leaves
- 1 finely chopped chili
- Handful of cranberries
- Handful of fresh blueberries

Instructions:
- Rinse quinoa and drain
- Heat oil in a pan, lightly toast quinoa for 1-2 minutes
- Add water and salt, simmer covered (like rice) until cooked. Let cool
- Chop all veggies & herbs, then mix with quinoa
- Whisk dressing ingredients, toss with salad
- Adjust seasoning as you see fit, then enjoy!
