Juicy kebab-stuffed pitas grilled to crispy perfection. Your ultimate weekend treat!
Ingredients:
- 3 thick pitas cut in half
Kebab Filling:
- 1/2 kg fatty ground meat (20% fat – lamb fat is even better)
- 1 large onion, finely chopped
- 2 garlic cloves, crushed
- 1/2 bunch cilantro
- 1/2 bunch parsley
- 1/2 tsp baking sodia
- 1/4 cup water
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cumin
- 1/4 tsp cinnamon
- 1/4 tsp chili flakes
Spiced Oil Marinade:
- 1 tsp oregano
- 1 tbsp paprika
- 1/4 tsp coarse chili flakes
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/3 cup olive oil
- 1/4 cup fresh lemon juice
- 3-4 crushed garlic cloves

Instructions:
- Combine meat, onion, garlic, herbs, and spices. Knead until sticky
- Refrigerate for 1 hour or overnight
- Whisk all marinade ingredients. Generously brush pitas inside and out
- Divide filling into 6 portions; stuff into pita halves
- Sear on grill at high heat 2-3 minutes per side, then lower heat. Cook 15-20 minutes total, basting with extra oil.
- Tip: Stand pitas upright to crisp the open edge
- No grill? Use a grill pan or oven (400F, flip halfway)
- Serve hot off the grill
