Dubai Puffed Rice Bars

Dubai Puffed Rice Bars

A perfect blend of sweet chocolate, nutty tahini, and crunchy pistachios, all in a gluten free and freezer friendly package!

Ingredients:

  • 100g white chocolate
  • 100g dark chocolate
  • 2 cups rice puffs
  • 2-3 tbsp pistachio spread (or almond butter)
  • 2 tbsp tahini
  • Handful of chopped salted pistachios

Garnish:

  • Melted chocolate
  • 1.5 tsp pistachio spread
  • Crushed pistachios

Instructions:

  1. Melt white and dark chocolate separately, and spread in layers in a silicone mold/lined tray
  2. Freeze for 5 minutes to set
  3. Mix rice puffs, pistachio spread, and tahini. Fold in chopped pistachios
  4. Press mixture onto the frozen chocolate layer, then cover with more melted chocolate
  5. Drizzle with melted chocolate + pistachio spread swirl, and sprinkle with crushed pistachios
  6. Freeze for 30 minutes until firm

For a vegan alternative, use dairy free chocolate instead!
