Nutritious and delicious, this vegetarian potato salad is the perfect dish to freshen up your day!
Ingredients:
- 4-5 medium potatoes
- Olive oil
- Salt
- Pepper
Dressing:
- 2-3 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 2 tbsp vinegar
- Juice of 1 lemon
- Salt & black pepper to taste
- 1 red onion, thinly sliced
- 1 chili, chopped
- Handful of chopped chives
- Handful of chopped cilantro
To Serve:
- Lemon zest
- Coarse salt
- Cracked black pepper

Instructions:
- Boil the potatoes in salted water until tender yet still firm. Drain well
- Smash and bake potatoes till golden and crispy
- In a bowl, whisk together mayonnaise, mustard, vinegar, lemon juice, salt, and pepper
- Add red onion, chili, chives, and cilantro. Mix well. Let sit for flavour absorption
- Gently toss fried potatoes with the dressing just before serving
- Top with lemon zest, coarse salt, and cracked pepper
Serve in a large salad bowl for everyone to share!
