Herb-Loaded Potato Salad

Nutritious and delicious, this vegetarian potato salad is the perfect dish to freshen up your day!

Ingredients:

  • 4-5 medium potatoes
  • Olive oil
  • Salt
  • Pepper

Dressing:

  • 2-3 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 2 tbsp vinegar
  • Juice of 1 lemon
  • Salt & black pepper to taste
  • 1 red onion, thinly sliced
  • 1 chili, chopped
  • Handful of chopped chives
  • Handful of chopped cilantro

To Serve:

  • Lemon zest
  • Coarse salt
  • Cracked black pepper

Instructions:

  1. Boil the potatoes in salted water until tender yet still firm. Drain well
  2. Smash and bake potatoes till golden and crispy
  3. In a bowl, whisk together mayonnaise, mustard, vinegar, lemon juice, salt, and pepper
  4. Add red onion, chili, chives, and cilantro. Mix well. Let sit for flavour absorption
  5. Gently toss fried potatoes with the dressing just before serving
  6. Top with lemon zest, coarse salt, and cracked pepper

Serve in a large salad bowl for everyone to share!
